A Stormy Winter Weekend

Hey Everyone! How’s your weekend been? It’s been raining consistently since Friday late morning. After work on Friday we were craving soup and I ended up making one of my favorites that I ate as a kid. It’s a variation on Betty Crocker’s Minestrone Soup.

  • 1 15 oz. can  cannelloni beans (rinsed and drained)
  • 8 cups beef broth
  • 3 cups shredded cabbage (I just buy a small head and put it all in)
  • 2 medium potatoes peeled and cubed
  • 2 medium carrots chopped
  • 1 medium zuchinni sliced 1/4 inch thick
  • 1 medium onion chopped
  • 1 16 oz. diced tomatoes
  • 1 package frozen cut green beans
  • 1 package frozen chopped spinach
  • 1 clove garlic minced
  • 2 teaspoons salt
  • grated parmesan cheese

Throw everything except the cheese into a big stockpot and let it simmer away for at least 45 minutes. You really can’t screw this soup up. And you can customize it however you like. It also makes a really large amount so if there’s only one of you, I would cut the recipe down or freeze part of the finished product. The best part is topping this soup with lots of parmesan cheese and stirring it up so it all melts. So tasty! I also intentionally leave out a pasta in this soup because I’d rather have some crusty bread to dunk in it but you could throw in some shells for more staying power.

The rest of the weekend, it kept raining. We got a new Honda CR-V on Saturday but I don’t have a picture to post because of the nasty storm. I’ll post one next week!  Today is homework, grocery shopping, cleaning the house and baking some chocolate chip cookies.

Tuesday-Class night so hubby will eat leftover pizza

Thursday- Chicken Enchiladas with Spanish Rice (using the crockpot to cook the chicken while I’m at work!)

Friday- Valentine’s Dinner of Sockeye Salmon, Mashed Potatoes, Roasted Asparagus and Molten Chocolate Lava Cakes for dessert!

Saturday and Sunday-Left open for socializing and leftovers

  1. Sounds wonderful! Can your dad come live with you? I never cook anymore…LOL (of course, he doesn’t LOOK hungry, does he?)
